A tomato pie can take on a variety of forms, depending on your culture and where you live. An American tomato pie recipe usually calls for an actual pie crust, while the Italian version is made from Sicilian style dough.
The differences are obvious in the recipes below. Enjoy!
Southern Tomato Pie Recipe
5-6 ripe tomatoes, sliced
1 (9 inch) pie crust
1/2 cup grated mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup mayonnaise
1/3 cup fresh basil leaves, chopped
Salt, pepper & oregano to taste
Slice tomatoes. Place in a colander in the sink or line individually on a paper towel. Salt tomatoes. Let juices drain for 10-20 minutes.
Preheat oven to 350 degrees F. Bake the pie crust for 5 to 7 minutes or until browned.
Add sliced tomatoes, onions, and basil to the pie crust. Season with salt, pepper and oregano. In a medium bowl, mix mozzarella, parmesan and mayonnaise. Spread evenly over tomatoes.
Bake 25-30 minutes or until lightly browned. Serve warm.
Three Cheese Tomato Pie Recipe
5-6 ripe tomatoes, sliced

1 egg
1 cup grated mozzarella cheese
1/3 cup grated Parmesan cheese
1 1/2 cups ricotta cheese
1/3 cup fresh basil leaves, chopped
Salt, pepper & oregano to taste
Slice tomatoes. Place in a colander in the sink or line individually on a paper towel. Salt tomatoes. Let juices drain for 10-20 minutes.
Preheat oven to 350 degrees F. Bake the pie crust for 5 to 7 minutes or until browned.
Add sliced tomatoes and basil to the pie crust. Season with salt, pepper and oregano. In a medium bowl, mix egg, mozzarella, and ricotta. Spread mixture evenly over tomatoes. Sprinkle parmesan on top.

Meaty Tomato Pie Recipe
5-6 ripe tomatoes, sliced
1 (9 inch) pie crust
1 green onion, chopped
1/2 pound bacon, cooked, drained and crumbled
1 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup ricotta cheese
1/3 cup fresh basil leaves, chopped
Salt, pepper & oregano to taste
Slice tomatoes. Place in a colander in the sink or line individually on a paper towel. Salt tomatoes. Let juices drain for 10-20 minutes.
Preheat oven to 350 degrees F. Bake the pie crust for 5 to 7 minutes or until browned.
Add 1 layer of sliced tomatoes, bacon, onions, and basil to the pie crust. Season with salt, pepper and oregano. In a medium bowl, mix mozzarella, and ricotta. Spread 1/2 of mixture evenly over tomatoes. Repeat layer of sliced tomatoes, bacon, onions, and basil. Add other 1/2 of ricotta spread. Sprinkle parmesan on top.
Bake 25-30 minutes or until lightly browned.
Italian Tomato Pie Recipe
1 1/2 cup finely diced tomatoes
1 prepacked or homemade pizza dough
1/4 cup grated Parmesan cheese
3 Tbsp Extra virgin olive oil
3 cloves garlic
Salt, pepper & oregano to taste
Preheat oven to 450 degrees F. Stretch the pizza dough to cover a greased cookie sheet. Set aside and allow the dough to rise.
Heat a saucepan on medium heat. Add olive oil and saute garlic until golden. Add diced tomatoes, salt, pepper and oregano.
Cook for approximately 15 minutes until the sauce thickens. Allow the sauce to cool to room temperature.
Spread sauce on pizza dough. Sprinkle with parmesan.
Bake 15-20 minutes or until lightly brown. Serve warm or at room temperature.
